Chocolate fudge pudding

This chocolate pudding makes its own delicious sauce.

Ingredients

  • 3oz/75g self-rasing flour
  • 2 level tbsp Traidcraft cocoa powder
  • pinch salt
  • 4oz/100g butter or margarine
  • 4oz/100g Traidcraft golden caster sugar
  • 2 medium eggs
  • 1 tsp vanilla essence
  • 1-2 tbsp milk

For the sauce

  • 4oz/100g Traidcraft muscovado sugar
  • 2 level tbsp Traidcraft cocoa powder
  • 1/2 pint/300ml hot water

Method

  1. Sift together the flour, cocoa powder, and salt and set aside.
  2. Cream the butter or margarine and caster sugar. Lightly mix the eggs and vanilla essence and gradually beat into the creamed mixture.
  3. Then gradually fold in the sifted flour and cocoa adding enough milk to make a medium soft consistency.
  4. Spoon the mixture into a well-buttered 2 or 2+ pint (1-1+ litre) baking or pie dish and spread evenly. Set aside while preparing the sauce.
  5. In a mixing bowl, combine together the muscavado sugar and cocoa power. Stir in the hot water and mix well, then pour over the top of the cake mixture.
  6. Place the pudding at once in the middle of a moderately hot oven 190C )375F/Gas Mark 5) and bake for 40 minutes.
  7. Serve hot with cream or ice-cream.
