Chocolate fudge pudding
This chocolate pudding makes its own delicious sauce.
Ingredients - 3oz/75g self-rasing flour
- 2 level tbsp Traidcraft cocoa powder
- pinch salt
- 4oz/100g butter or margarine
- 4oz/100g Traidcraft golden caster sugar
- 2 medium eggs
- 1 tsp vanilla essence
- 1-2 tbsp milk
For the sauce - 4oz/100g Traidcraft muscovado sugar
- 2 level tbsp Traidcraft cocoa powder
- 1/2 pint/300ml hot water
Method - Sift together the flour, cocoa powder, and salt and set aside.
- Cream the butter or margarine and caster sugar. Lightly mix the eggs and vanilla essence and gradually beat into the creamed mixture.
- Then gradually fold in the sifted flour and cocoa adding enough milk to make a medium soft consistency.
- Spoon the mixture into a well-buttered 2 or 2+ pint (1-1+ litre) baking or pie dish and spread evenly. Set aside while preparing the sauce.
- In a mixing bowl, combine together the muscavado sugar and cocoa power. Stir in the hot water and mix well, then pour over the top of the cake mixture.
- Place the pudding at once in the middle of a moderately hot oven 190C )375F/Gas Mark 5) and bake for 40 minutes.
- Serve hot with cream or ice-cream.
