Fruity squares
These squares are a great snack to take to work or for kids' lunch boxes.
Ingredients - 200g/7oz plain wholemeal flour
- 175g/6oz margarine
- 150g/5oz Traidcraft muscavado sugar
- 1lb/675g Traidcraft mixed dried fruit
- 1 tsp mixed spice
- 2 tbsp malt extract
- 1 tbsp Fruit Passion orange juice
- 3 tbsp Traidcraft chopped walnuts
- 4 eggs
Method - Preheat oven to 170C/325F/Gas Mark 3.
- Grease and line a 28cm x 18cm (11" x 7") baking tray.
- Sift flour and spices into a bowl.
- In a separate bowl cream together the margarine, sugar and malt extract.
- Beat in eggs one at a time to the creamed mixture adding a tbsp of flour. Fold in the remaining flour with the mixed dried friut and orange juice.
- Turn mixture into tin, smooth and sprinkle with walnuts.
- Bake in oven for 1 1/4 hours, or until a skewer pierced through the centre comes out clean.
- Cool on a wire rack, then cut into squares.
