Fruity squares

These squares are a great snack to take to work or for kids' lunch boxes.

Ingredients

  • 200g/7oz plain wholemeal flour
  • 175g/6oz margarine
  • 150g/5oz Traidcraft muscavado sugar
  • 1lb/675g Traidcraft mixed dried fruit
  • 1 tsp mixed spice
  • 2 tbsp malt extract
  • 1 tbsp Fruit Passion orange juice
  • 3 tbsp Traidcraft chopped walnuts
  • 4 eggs

Method

  1. Preheat oven to 170C/325F/Gas Mark 3.
  2. Grease and line a 28cm x 18cm (11" x 7") baking tray.
  3. Sift flour and spices into a bowl.
  4. In a separate bowl cream together the margarine, sugar and malt extract.
  5. Beat in eggs one at a time to the creamed mixture adding a tbsp of flour. Fold in the remaining flour with the mixed dried friut and orange juice.
  6. Turn mixture into tin, smooth and sprinkle with walnuts.
  7. Bake in oven for 1 1/4 hours, or until a skewer pierced through the centre comes out clean.
  8. Cool on a wire rack, then cut into squares.
