Olive and mozzarella pasta salad
This pasta salad combines the classic Mediterrean flavours of mozzarella and olives for a simple but tasty meal.
Ingredients
For the olive dressing
- 1-2 garlic cloves, finely chopped
- 4 spring onions, finely chopped
- 20 finely chopped olives of your choice
- Juice of 3 lemons
- 1 handful fresh chopped basil
- 1 ball mozzarella, diced
- 2-3 tbsp olive oil
- 2 tsp balsamic vinegar
- Salt and freshly ground black pepper
Optional extras
- Sun dried tomatoes
- Fresh vine tomatoes
- Roasted red peppers
Pasta
- 300g (10.5oz) Traidcraft pasta, drained and kept warm
- 1 tbsp olive oil
Method
Dressing
- Put all the ingredients into a bowl, season with salt and pepper and mix well.
Pasta
- Put the cooked pasta into a bowl and stir in the olive oil. Pour the dressing over the pasta and stir well.
- To serve, place the pasta salad into a serving bowl.
