Bombay salad

This salad, with its heady blend of flavours, serves four as a starter or side dish to a curry.

Ingredients

  • One salad onion
  • One red pepper
  • Juice of 2 limes
  • Handful each of fresh mint and coriander leaves
  • A packet of Traidcraft Bombay mix

Method

  1. This is best started the day before, to let the flavours blend.
  2. Finely chop the onion and red pepper, stir in the juice, cover and leave in the fridge overnight.
  3. Next day, chop and stir in the herbs.
  4. Just before serving, stir in the Bombay mix.
  5. Serve on a bed of salad leaves.
