Bombay salad
This salad, with its heady blend of flavours, serves four as a starter or side dish to a curry.
Ingredients
- One salad onion
- One red pepper
- Juice of 2 limes
- Handful each of fresh mint and coriander leaves
- A packet of Traidcraft Bombay mix
Method
- This is best started the day before, to let the flavours blend.
- Finely chop the onion and red pepper, stir in the juice, cover and leave in the fridge overnight.
- Next day, chop and stir in the herbs.
- Just before serving, stir in the Bombay mix.
- Serve on a bed of salad leaves.
